  • Jay C. Mickelson purchased the Snak Shak Cafe in 1962. Jay had previously been a salesman for the HJ Heinz Company. Within two years the growth had exceeded the facility and plans for a new building were under way. This new building completed in 1964 became the home for Mickelson’s Restaurant for the next 30 years. The new building brought great success and sales increased above expectations. Mickelson’s became a regular stop for many Utahn’s. Our first meal at our new location was served May 30th 1995.
    Our success since that first day in May has been fantastic. We have been accepted by locals and travelers at a greater level than we had possible dreamed could happen.
